Based in Connecticut, Proof and Wood Ventures Inc. is a spirits company that buys, sells, ages, and bottles primarily American whiskey. More recently, they have added a rum as well as other spirits to their lineup, including a Dutch genever. Founded by Dave Schmier, the company develops brands, sourcing high-quality spirits from across the globe, as well as aging their own. Their range includes all manners of spirits that range from cocktail-friendly to super-premium collectors’ editions. The name takes its inspiration from 2 of the most important things a blender and bottler must take into account: the proof a spirit is bottled at and the wood of the barrel it was aged in.

Idle Hands Bourbon came to be as a collaboration with the now-defunct NY whiskey bar of the same name. It is a small-batch bourbon with a high-rye mash bill of 60% corn, 36% rye, and 4% malted barley that has spent at least 5 years in new American oak. Distilled in 2015 in Indiana, it has seen 2 batches thus far, each consisting of 13 barrels. Bottled at 95.2 proof, it’s rich with caramel, vanilla, fruit, baking spice, and oak notes.
